tonight, we will be having paleo stuffed red peppers for dinner, and part of that recipe is cauliflower rice.
its so simple to make and we will be using it twice- tonight in our stuffed peppers and tomorrow night in fried rice.
take a pretty head of cauliflower and chop it into large florets, put into a food processor.
pulse the cauliflower until it resembles the size of rice or cous cous.
dice up some onion (i did about 1/4 of yellow onion) and a clove of garlic.
melt 2T coconut oil in a large skillet or wok over medium heat, then add the onion and garlic and cook until softened, stirring occasionally, about 5 minutes. raise heat to medium high, add the cauliflower, a couple pinches of salt and cook 8 minutes, stirring occasionally.
voila! cauliflower rice.
i will post the stuffed red pepper recipe soon and let y'all know what i thought of the rice.
