i really feel like i need to (gently) urge you to get on this. this is the second time i have made these broccoli, chive + sharp cheddar twice-baked potatoes and i'm already wishing i would have made even more so that i can hoard them in my freezer.

broccoli and cheddar twice baked potatoes



i was in folsom last weekend, dogsitting for some sweet friends, and as i was trying to figure out what i wanted for dinner the first night there, i remembered- they now have a whole foods! yah, yah, "whole paycheck" and all that jazz, but i can't help myself, i love that place.

roasted herbed potatoes



i don't know about you, but on weekend mornings all i want is coffee, my comfy couch and an easy breakfast. none of this standing at the stove all morning, covering, uncovering, stirring, lowering and raising the temperature to try to give the potatoes a golden brown crust on the outside and get them perfectly fluffy on the inside.

vegan potato, chickpea + spinach vindaloooooo



this meal is a shortcut way to get dinner on the table in no time. there is zero shame in using pre-made sauces and if you shop right, they can be delicious and healthy. i found this vegan vindaloo sauce in the refrigerated section of my local hippie market and they also make a butter sauce and a tikka masala sauce. 

i also just like to say vin da looooooo, so there is that.

potato + kale cakes with rouille



these potato and kale cakes were a big hit, they were creamy and fluffy on the inside with a crispy crust on the outside. we had just them for dinner the first night and then i used the mashed potatoes + kale as a side for our awesome fried chicken the next night. i think next time i make these, and there will be a next time, i will add a bit more kale than the recipe asks for.

citrus thyme salt rub



these baked spuds were tasty and simple, two of my favorite things when it comes to getting dinner on the table!

i threw together a quick little rub, rubbed the clean potatoes with a generous amount of olive oil and then rubbed all of the citrus salt all over the four taters. i let them sit at room temperature for a few hours with the rub on, baked em and called it dinner (topped with broccoli, cheese and a little bacon, of course).

potato + bacon + thyme soup

i love that i can make a creamy and rich soup that has zero heavy cream in it. i didn't even need to use full fat milk in this recipe and the results still seem sinfully comforting.

gobble, gobble

this year, my husband and i did a quiet thanksgiving at home, just the two of us. it was a peaceful, mellow day full of love, a couple bottles of fruity pinot noir and delicious food.

it was exactly what we needed.

i win.



























let me tell you, this little potato was a worthy opponent. worthy. with all it's starch and attitude and resistance, it definitely gave me a run for my money.

but me?  i'm determined and spunky and persistent. my persistence payed off here. big time.



























look at those hash browns. crispy on the outside and fluffy (not slimy!) on the inside.

i win.

hot potato!



for whatever reason, i've been on a major freezer meal kick lately. these super stuffed potatoes freeze beautifully, are easy to make in large quantities (i made 12) and are an easy weeknight dinner paired with a salad or roasted vegetable.



i chose to stuff mine with sharp cheddar, butter, sour cream, scallions and what else? bacon!
