whipped broccoli



this is a quick recipe for whipped broccoli for the bebe that can easily be adjusted and added to to make some tasty and healthy sides for the whole family. believe it or not, the whipped broccoli is delish as is, with just a small pat of unsalted butter whirled into the still steaming hot broccoli in the food processor.

 if you want to change it up, you could add a little more butter, salt and some plain greek yogurt, steam some cauliflower with the broccoli and do a blend or mix the broccoli and/or cauliflower with some mashed potatoes. i'm going to make a batch of whipped broccoli potatoes and whipped cauliflower soon, for us and the bebe!


whipped broccoli

1 head organic broccoli (or cauliflower)
2 T unsalted butter
1/2 cup water (save a little of the water from when you steam it)

pour about an inch or so of water in a pot and add metal steamer basket (if you dont have a steamer just add the broccoli directly to the water in the pot), cover and cook on high heat until the broccoli is very tender. drain and save some water from pot.

put still hot broccoli and 2 T butter into food processor and whirl it up, adding some of the water if needed, to loosen it up and get the texture you like.

*be careful when processing hot foods!*
