turkey + beef meatloaf patties with a sriracha glaze




this recipe is a delicious, easy and sneaky way to get lots of vegetables into your meat focused dinner. the key to making the veggies stealth is to chop them tiny and to saute them in some olive oil to soften them before adding them to the meat mixture. i added onion, zucchini, red bell peppers, carrots and yellow summer squash. i think finely chopped spinach and green bell peppers would be a tasty addition!

 



turkey + ground beef meatloaf patties

1 lb ground turkey
1 lb grass fed ground beef
2 zucchini
1 yellow squash
1/2 yellow onion
2 carrots
1 red bell pepper
(all above veggies cut into small dice)
1 cup japanese panko crumbs
1/2 cup milk
1/2 tsp dried oregano
3T tomato paste
1 egg
1T olive oil
salt + pepper

sweet n spicy sriracha glaze

4T sriracha
4T ketchup
2 tsp rice wine vinegar
3T brown sugar

put all ingredients in small bowl and mix well. taste and add more vinegar and sugar if desired.


meatloaf

preheat oven to 375 degrees and line a baking sheet/dish with tin foil.

saute all the veggies, seasoned with a little s+p, in olive oil over medium heat for 7 minutes, stirring occasionally.

while the veggies are sauteing, put panko in a large bowl and pour milk over it. stir and let sit.

once veggies have cooled a bit, add them, 1/2 tsp salt, 6 or 7 cracks of pepper, tomato paste, egg and oregano to the bowl with the panko. use your hands or a fork and combine well. add in the meat and use your hands to mix it all up.

 shape meat into 8 equally sized patties and top with 1T (or more) of the sriracha glaze.

bake for 40 minutes and then let rest for 10 minutes before digging in.
