crispy, crunchy baked zucchini fries



these super crunchy zucchini fries will satisfy your french fry craving with way less fat, no frying and (don't tell anyone) zucchini is good for you!
  



preheat oven to 375 degrees.

cut the zucchini, yellow squash or eggplant into 1/2" ish matchsticks. 

grab 3 small bowls. make an assembly line. put about 1/2 cup of flour in one bowl. beat 2 eggs in another bowl. dump about 1 cup panko or breadcrumbs, 1 tsp olive oil, and 1/2 tsp salt in another and mix well.

dip the zucchini in the flour, shake off excess, dip in egg, shake off excess, dip in breadcrumbs, pressing them to the zucchini to ensure they are well coated.

lay on baking sheet and bake for 20-30 minutes until golden brown and delightful. start checking them at 20 minutes.

serve with ranch or marinara sauce.
