roasted herbed potatoes



i don't know about you, but on weekend mornings all i want is coffee, my comfy couch and an easy breakfast. none of this standing at the stove all morning, covering, uncovering, stirring, lowering and raising the temperature to try to give the potatoes a golden brown crust on the outside and get them perfectly fluffy on the inside.






lucky for you, i have this quick and simple recipe for crispy and tender potatoes, no standing in the kitchen all day required!

these are delicious for breakfast, topped with a perfectly fried egg or for dinner, topped with some juicy, just-roasted chicken. you could also add some garlic cloves, bell peppers or onions.

easy herbed potatoes
4-5 servings

5 or 6 medium potatoes, washed well
2 tsp fresh rosemary, minced
2T fresh chives, chopped to about 1/2 inch pieces
2 tsp fresh thyme, leaves stripped from stems
1T olive oil
salt + pepper

preheat the oven to 375 degrees.

dice the potatoes into a small size, trying to get them all about the same size so they will cook evenly.

place the potatoes on a baking sheet, add olive oil, herbs and salt and pepper. toss to coat evenly and lay in a single layer on sheet.

bake for 25 minutes.
