paleo stuffed red bell peppers



i've been feeling very full lately and feeling the need to cut back on carbs, so i have been peppering the weekly menu with paleo(ish) recipes.






these peppers are not only good for you and full of vegetables (spinach, red pepper, cauliflower, onion, garlic), they are delicious. and that, my friends, is how i pick which paleo recipes to add into our dinner rotation. taste. 





so forget that these are paleo if that isn't your thing and just hear this-they are yummy! 
(you could even add a little parm-reg to the tops of a couple of them like i did)






paleo stuffed red bell peppers 

1 lb grass fed ground beef
3 big handfuls spinach
1/2 yellow onion, diced
1 clove garlic, minced
4 red bell peppers, cut in half, seeds + veins removed
1+ cup organic tomato sauce (homemade is best, i used trader joe's)
s + p to taste

preheat oven to 375

in a large skillet over medium heat, cook the ground beef, breaking up the large clumps, 7 minutes. add the onion and garlic and cook until the onions are nicely softened, about 5-6 minutes. add all of the spinach and stir, stir, stir. the spinach will wilt down to nada pretty quickly. add the cauliflower rice and tomato sauce and mix well, cooking for another 2 minutes. taste and season with s + p as needed.

carefully stuff the peppers with the mixture and then top with additional tomato sauce and bake for 20-25 minutes.

if they were in season, zucchini would be a delightful addition to these peppers.
