italian sausage frittata




you all know how much i love a good frittata. they are always quick, easy, delicious. but, the best thing about a nice fluffy frittata is that you can put whatever you have on hand in it and the possibilities are endless.






i had been looking forward to going to our favorite breakfast place, cafe coda, all weekend.  their coda benedict kills it, everytime. mmm....that hollandaise and those light, poached eggs and crisp herby potatoes...

where was i? oh, yes. breakfast. 

so, i had been looking forward to breakfast out this morning, especially since we probably only go out to breakfast once every couple of months. but, when i woke up i started thinking about all the breakfast fixin's we had in the fridge and started throwing together a frittata in my brain before i had even left the comfort of my bed.

we had one italian chicken sausage leftover from the kale and sausage soup i made last week, and then we always have eggs, cheese and vegetable bits in the veggie bin the fridge. i sauteed some onion, garlic, red bell pepper, added the crumbled italian sausage, beat 5 eggs, shredded 1/2 cup of extra sharp cheddar and voila! breakfast (or lunch or dinner) is served.
