hot potato!



for whatever reason, i've been on a major freezer meal kick lately. these super stuffed potatoes freeze beautifully, are easy to make in large quantities (i made 12) and are an easy weeknight dinner paired with a salad or roasted vegetable.



i chose to stuff mine with sharp cheddar, butter, sour cream, scallions and what else? bacon!

i washed, dried and poked holes all over the taters first. then, i baked the potatoes on a baking sheet for 1 hour 10 minutes @ 400 degrees. once they cooled enough to handle i carefully scooped out the fluffy insides and put them in a large bowl and mashed them with a potato masher. next i added 1/2 a stick of butter (cut into small cubes), about 1 cup warm milk, 1 cup sour cream, 2 cups shredded cheese, some scallions and 6 slices crumbled + precooked bacon and mixed it all up.




then, i added salt and pepper and carefully scooped a generous amount of the filling into each tater skin.




i put a few in the fridge and set the rest carefully on a baking sheet and they are in the freezer right now. once they are frozen, i will wrap each potato individually with plastic wrap and store them in a freezer bag. to reheat them, you can pull as many as you want from the freezer the night before and place them in the fridge. bake them on a baking sheet @ 350 for 20-25 minutes and enjoy that hot potato!
