lemon-basil mayo



summer is here.

extra long days of sunshine, swimming, sandals, reading, being surrounded by friends and family at bbq's and eating good food.

 if you are looking for a simple and quick way to amp up the flavor of those summer meals, look no further. this mayo is bright and garlicky and adds a ton of flavor to sandwiches.


i love it slathered on salmon burgers, grilled chicken sandwiches, turkey or veggie sandwiches and  on blt's- don't forget the avocado!



lemon-basil mayo
enough for 2-3 sandwiches

1/4 cup good mayo
1 small clove garlic, minced very fine (it will be raw so you want tiny, tiny pieces of garlic)
10 basil leaves, chopped
juice and zest from 1/2 lemon
s + p

mix it all up and let it sit in fridge for a few hours or overnight to let the flavors really get to know each other, you know, let em mingle.

taste and adjust seasonings as desired. i like mine with a big punch of lemon so i sometimes add more juice or zest.
