snuggling in to mamahood



helllllooooo!

i just wanted to check in (while bebe nixon sleeps in his carseat) and say hello and let you know that, yes, i am still here.

i am snuggling in nicely to my new role as a stay at home mama, trying to snatch naps in the afternoons while he naps and mastering the art of eating lunch straight out of the fridge, one handed (the other day i had a small wedge of cheese, an apple, some bits torn off of a whole roasted chicken, and a few slices of cucumber).

there isn't a ton of cooking going on up in this house, but if the mood strikes and the energy is there, i still do love to get in the kitchen. i roasted a pork shoulder with green curry and coconut milk, made spiced indian chickpeas with garlicky yogurt sauce, and made a mean (ahem, boxed) organic mac and cheese with steamed broccoli.

this week we are having steak sandwiches (left over steak from dinner at my parents house) on toasted ciabatta with lettuce, heirloom tomatoes and lots of horseradish mayo, skillet burgers with homemade zucchini pickles (thank you, anna!), scrambled eggs with avocado toast + fresh fruit, and spring greens salad with lemon honey vinaigrette, sweetened pecans, avocado and goat cheese.

i am starting to get a hold of the gentle rhythm of our days and i can see that one day, soon, i hope, i will be spending more time sharing recipes and pics with you folks!
