sweet summer song

even though i am looking forward to the arrival of fall, i'm still trying to squeeze every last drop of  summer flavor out of this season that i possibly can. meals like this one, bursting with the bright tastes of basil, corn and zucchini are on the agenda for the next few weeks.

these quesadillas were creamy, sweet, tangy, and had just a little heat. we think that next time we will grill them (i just cooked them in a skillet this time) and add a drizzle of verde sauce to the inside just to add a bright note. these would also be delish with some guacamole piled on each bite.

can you hear that? it's the sound of summer slowly slipping away...

make these quesadillas, grab a nice glass of wine and eat outside. preferably barefoot, feet in the cool grass. try to hang on to summer for just a little longer.
