a couple posts ago i spoke of my intense desire to see summer receding in my rear view mirror and to see nothing but fall ahead of me as far as the eye can see.
but then i made this salad.
it is the epitome of summer on a little white plate- full of fresh, fragrant basil, gorgeous heirloom tomatoes bursting with juices, grilled super sweet corn that releases its sweet nectar when the tiny little kernals burst in your mouth and creamy little hunks of avocado.
its then dotted with burrata chese, which i had for the very first time last weekend at crush 201. its a fresh mozzarella made with cream which makes it super soft and creamy and oh so good. right before serving, the salad is drizzled with olive oil and/or balsamic vinegar and dusted with some sea salt. you can also drizzle it with a balsamic reduction.
to make balsamic reduction... pour 1 cup balsamic vinegar into a sauce pan and simmer over low heat, reduce down to 1/4 cup to make a syrup, or reduction, of balsamic vinegar.
this salad is actually an exact replica of a delicious summer salad i had there with a small group of lovely girlfriends. hooray for girfriends! we shared a few appetizers- super garlicky garlic bread, bruschetta and deep fried calamari and i ordered this salad because it sounded so dang good. and it was!
okay. so maybe i'm not quite ready to bid farewell to summer just yet...
