chipotle, lime and honey marinated pork chops

i saw this recipe on a paleo blog, fast paleo, and even though we arent eating the paleo way, it just sounded like a delicious recipe. i try to throw in paleo friendly meals once or twice a week just to cut down on our carbs. all that matters to me when i choose a recipe is that it makes me want to put that food in my belly, but it definitely gets major bonus points if its healthy, too!


the marinade is dead easy since all you do is toss all the ingredients in a food processor. i used 2T honey instead of the agave, but other than that i let the recipe be.



    i soaked some pork chops in this for 6 hours and then daniel grilled them up along with some zucchini while i sauteed some blue lake green beans in a little bacon fat (yes. bacon fat. yes. i keep a small jar of bacon fat in the fridge. and yes, its awesome) with some onions and some paper thin almond slices.

the verdict? tasty, flavorful, juicy, slightly smoky, spicy, sweet and lime juice-y chops. or in one word,

seriously delicioso!

wait, that was two words. whatever, you get my drift. make this marinade and put it on a steak, chops, chicken, kebobs or some tofu. just make it.

and hey! while you are at it, grill some zucchini and whip up some delish green beans with onions and almonds and pat yourself on the back for a job well done.






chipotle lime marinade  via fast paleo

1/4 cup extra-virgin olive oil
1 chipotle chile, from canned chiles in adobo sauce
4 tablespoons fresh lime juice (i think orange juice would be tasty here,too)
1 tablespoon raw agave nectar (or 2T honey)
2 tablespoons water
3-4 cloves garlic, peeled
1 teaspoon kosher salt
1/2 teaspoon ground cumin
cilantro leaves from 4-5 stalks (small handful)

place marinade ingredients in a small food processor bowl and process until garlic and chile are well blended. this marinade will act as a brine to help keep the food moist when cooking, as well as adding awesome flavor!

  2. we love our weber for sure, no gas grill for us! although, sometimes we think the ease of walking out and just switching it on is (almost) alluring enough for us to spring for one.

  5. thank you! just a tip- instead of buying a can of chipotles in adobo, you can get chipotle puree in a small jar @ s+s produce. i just use a sharpie to mark the lid with the date i opened it, and i'm pretty sure it will keep in the fridge for months!
