petite cheesecakes with balsamic raspberry sauce



if you are anything like me, all you need is one miniscule, gentle nudge to get in the kitchen and whip up a sweet morsel. i bake when i am happy, when i am sad and when i am bored, but only on days that end in y.

yah, i'm strict with myself like that.

so here's the gentle little push that you have been waiting for. fluffy, creamy, decadent adorable little cheesecakes draped with a sweet and tart balsamic vinegar and raspberry sauce.

because, hey! its thursday. and all this thursday needs to make it just right is an awesome dessert. 





recipe via joy of baking

balsamic raspberry sauce

1/2 pint organic raspberries
1/8-1/4 cup sugar (depends on how sweet you want to go, i was somewhere btwn the two amounts)
2 tsp good quality balsamic vinegar

put all ingredients in medium pot over medium heat and cook down until berries break down and sauce gets thick n syrupy, about 10 minutes. let cool before draping over the cheesecakes.
