lemon cream pie

today we went to my sister's house for a father's day bbq. it was perfect weather outside... 89 and breezy in june? yes, please!  we played out front under their big, shady mulberry tree, ate popsicles, drank beer and watched coop play in his pool.

for lunch, we had grilled steaks (thanks glen!), corn on the cob, baked beans and asiago sourdough bread (from safeway...have you had this??? so good.) for dessert, i baked a lemon cream pie.



i always wanted to do this trick with the rolling pin!




i pressed the dough in and made it as pretty as i could. i think i over handled the dough, though, because the final result wasnt as light and flaky as with the galette. so, tip- touch the dough as little as possible to keep it light + flaky.




 cut some parchment paper to fit and then filled the pie with dried beans to blind bake it.




 i worked my magic with these little beauties, sugar, eggs and some sour cream. i baked the pie, let cool and then topped it with some fluffy and thick homemade whipped cream.




et voila!
