nachos, baby!


do you make nachos at home when the craving hits you like a mack truck? 

cuz you should.

every so often i get an irresistible desire for nachos. sometimes, it works out that we are going out for mexican food and so i can satisfy my need that way, but other times i am left to take matters into my own hands.

our plans for superbowl sunday fell through and so i thought that was a perfect excuse to make some homemade nachos for the mister and i while we (kinda) watched the game at home. i made a quick run to the store to pick up just a couple things and then came home and got to work.

this is one of my not-really-a-recipe recipes. i browned some grass-fed ground beef and seasoned it with cumin, chile powder, garlic powder, onion powder, coriander, salt and oregano. then i added a drained and rinsed can of organic pinto beans and cooked for a few more minutes until the beans were heated through.

while that was cooking, i made a bechamel (just like if i was going to make some macaroni and cheese)- 2T butter, 2T flour, 2 c milk, 1 1/2 c shredded sharp cheddar cheese. i melted the butter then added the flour and stirred and cooked for a minute just to cook out that raw flour flavor. i then added the warm milk (i just poured it in a bowl and zapped it in the microwave for 2 minutes) and whisked it all together until thickened slightly. i turned off the stove, dumped in the cheese and whisked to get a smooth consistency. then i added some tapatio hot sauce for flavor and a little kick.

voila! nacho cheese sauce!

time to build your perfect bowl of nachos. for me, it was- chips, meat and beans, tomatoes, pickled hot peppers, cheese sauce, guacamole and a dollop of plain greek yogurt.
