buttermilk coffee cake


remember this cake i just baked last week? remember how i applauded it for being easy, delicious, fluffy and versatile?

get ready to live, my friends, because this coffee cake was, in the words of the mister (this is a direct quote)- "the best coffee cake i have ever had. ever."


i knew when i tasted it as a strawberry cake that the texture and crumb was going to lend itself to so many different varieties of cake-goodness. it was serious perfection as a coffee cake and i can also predict that it would be just as amazing with a chocolate frosting or quick ganache drizzled on top. 

like chocolate chips? add some mini (so they don't all sink to the bottom) chocolate chips, or shards of chopped up good chocolate, to the batter. i also think this would make a delicious base for an upside down apple/pear/pineapple/cranberry cake or with a homemade frosting made with fresh strawberries.

this cake really does it all.

buttermilk coffee cake goodness

use this recipe for the cake and then instead of berries add-

1/4 cup flour
1/2 cup brown sugar
4T slightly softened butter
1 tsp cinnamon
1/2 cup chopped pecans (optional)

put it all in a small bowl and then use your (very clean) fingers to smoosh it all together into large crumbs. dot along the top of the cake batter and bake as directed in the original recipe.
