paleo mashed sweet potatoes, spinach and a fried egg aka breakfast

do you know what's in that little jar up there? c'mmmmonnn, you know. 

vegetarians and vegans, please look away, lest you be repelled by my little jar of bacon fat.

last night, i rubbed 4 sweet potatoes with the fat (vegetarians-just use coconut or olive oil ), poked some holes in them and roasted them on a baking sheet lined with parchment (makes clean up super simple) for 45 minutes @ 400.

then i let them cool, peeled the skin off of them, put the insides in a bowl and whipped them with an electric mixer with about 1 cup of coconut milk, salt and pepper. then i put it in the fridge to use for a few recipes this week.

this morning i wilted some organic spinach in 1 tsp coconut oil, then fried an egg, and voila! breakfast is served.

i drizzled a little thai chili oil on the top for a final little kick.
