this faux spring weather and the bees buzzing in the orchards have brought our apricot tree fully into bloom. we haven't had fruit on this tree in two years and i'm keeping my fingers and toes crossed that this year it will produce again.
the first summer we lived here it produced so much fruit, oodles and oodles of apricots, that we sent out a notice to friends that if anyone wanted to come pick, to help themselves. i think we had 3 or 4 people come out and pick and we still had a ton left on the tree.
this year, if the tree cooperates, i plan on making-
apricot jam
apricot compote
dried apricots
apricot galette
apricot almond scones (to freeze)
any other ideas?
