jalapeno corn cakes. caliente!
okay, these weren't really caliente, but if you wanted them to be spicy-hot you could leave the ribs and seeds in the jalapeno when you chop it up.
here's what they actually were- savory, a little spicy, sweet from the corn, nicely textured from the cornmeal, super tasty.
these would be awesome alongside a bowl of chili, or you could add some crumbled goat cheese or shredded sharp cheddar, or you could leave out the corn + jalapeno and have these for breakfast with a schmear of cinnamon-honey butter.
