chocolate and peanut butter cups (aka sheer happiness)

you know when something is so dang amazing that you don't know exactly how to describe it, and the fear of simply not doing it justice makes your brain freeze up?

um...yah.

my slightly modified version...

1⁄2 cup butter
3⁄4 cup crunchy or smooth peanut butter
(preferably unsweetened and unsalted)
3⁄4 cup graham cracker crumbs = 12 graham cracker squares = 3 whole graham crackers ( i added a little more the second batch to give it more texture, but that was just a personal preference)
1⁄4 cup granulated sugar
1 cup chocolate chips
1⁄4 cup soy, rice, almond or good old cow's milk
1⁄4 cup chopped pecans, almonds, or peanuts 


line a 12-cup muffin tin with paper liners.

set aside. 


melt the butter in a small saucepan over medium/med low heat.  

stir in the peanut butter, graham cracker crumbs, and sugar and mix well (you may need to use a whisk to get out all the clumps). remove the mixture from the heat. 

evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups. put in fridge and let chill 30-45 minutes.

combine the chocolate and milk in another pan. 

whisk over medium heat until the chocolate has melted. 

spoon the chocolate evenly over the chilled peanut butter mixture. 

top with chopped nuts. 

place in the refrigerator to set for at least 2 hours before serving.  its going to be brutally hard to wait but SO WORTH IT.
